The Castello della Sala in Umbria, located near the Tuscan border, is an imposing medieval fortress with 200 hectares of vineyards on a 600-hectare estate. The castle was built in 1350 for Angelo Monaldeschi della Vipera and has been closely linked to the history of the region ever since. The vineyards, which range from 220 meters to 470 meters above sea level, are planted with a variety of traditional and non-traditional grape varieties, including Procanico, Grechetto, Chardonnay, Sauvignon Blanc, Sémillon, Pinot Bianco, Viognier, Traminer and Riesling.
A highlight in the winery's history was the birth of Cervaro della Sala in 1985, one of the first Italian white wines to undergo malolactic fermentation and ageing in barriques. The estate's modern cellars perfectly combine tradition and innovation, ensuring that each wine is a modern interpretation of an ancient terroir.
