Regionality

To conserve resources, we give preference to purchasing goods – including fruit, vegetables and fresh herbs, as well as services and fresh produce – from local suppliers or those in the immediate neighbourhood. This approach is sustainable, and deliveries are therefore made in as climate-neutral a manner as possible.

For example, we purchase all our dairy products and cheese in our restaurants from the family business "Hof Fuhlreit", which produces under the best agricultural conditions here in Schleswig Holstein. They do not use genetically modified seeds and feed, but rely on lush grass, maize, legumes and various types of grain from their own cultivation for their animals.

Other types of cheese are supplied by the Itzehoe-based farm "Kober", which provides us with regional products in Demeter quality.
